To unlock extra karts, you must collect a certain amount of chocolate coins. Doing so will unlock the kart for the character you collected the coins as.
Unlockable: --- How to Unlock:
4x4 Jet Convertible Kart --- Collect 1000 chocolate coins
500cc Kart --- Collect 500 chocolate coins
Hovercraft --- Collect 100 chocolate coins
V24 Super Duty Truck --- Collect 200 chocolate coins
